The Apple Watch has all the sensors needed to track your sleeping patterns, but it doesn't look like it has the software to do so in its activity app. A third party developer could create one, though.

That being said, the Apple Watch is probably not super comfortable to wear all night. And the low battery life of the device means you'll need to charge it while you sleep, too.

And while you could put the watch under your pillow, you might as well just use your iPhone which has been tracking sleep through third-party apps and Apple's own Health app for yonks.
